There is this instagram bait eggs dish that I keep seeing on TV shows recently. It must be a trend among foods stylists or something. It's eggs poached in spicy tomato sauce and eaten with bread, called eggs in purgatory. I'd already read up on it a bit before I saw Billions this week and saw the damn dish again.

The recipes I saw all called for making sauce from scratch, but the sauce they made was basically arrabiata sauce. So, I bought a jar as a short cut. I also grabbed something calling itself vegan Parmesan. My result did not look fit for instagram at all. It looked like a mess. The first bite was bland. But I kept eating it since I made it. Once it was stirred a bit, it was really good. If I'd added some red pepper flakes to the sauce and maybe put some salt on the eggs before they cooked it might make it even better. I only made a small version of it, but it was still very hearty, especially with the bread.

With the shortcuts it took about 7 minutes total to make. Would totally make again on a day when I've been hiking. Way too heavy for daily meal.

(I'd include a picture but I don't have a cast iron pan like on the TV show versions and seriously, mine looked like a hot mess.)

Sounds delicious! I recently made a delicious spoonbread tamale pie, but the results were resoundingly unphotogenic.
