There is a weird rotten/sour taste that cow's milk has. I can't have milk or soy, among other things, so I'm not acclimated to that taste or smell.
I had milk for the first time in years today. I bought a brand of chocolate that typically doesn't use milk. I don't read every ingredient on every familiar product every time I buy it. If I've had it before, I just sort of glance at it to look for obvious changes. I only ate a bit, but the whole time I was like 'what is this faint off-taste?' I had a few more bites because it was vaguely familiar and I was trying to figure out what it was. Yup, it was cow's milk.
Hopefully my body just shrugs this off. I haven't had an accidental exposure to anything in years.
Food shopping is already so much work. I don't want to have to re-read ingredients on familiar products.

(I can't stand half-and-half, and heavier cream stuff is Right Out.) Oddly the one exception is the milk specifically from the dairy my mom ordered (and still orders) milk from. THAT does not give me the same "ew, this smells and tastes spoiled" experience.
I seem to remember reading something once about how some people can taste bitterness or sourness in milks that are pasteurized at certain temperatures, which is why some people dislike some of the bigger dairy brands' products, but are good with smaller dairies that may use a different process... Similar to people who are sensitive to tannins in wine and coffee and such, but I don't think there are tannins in milk? It'll bug me that I don't remember...

BUT to the real concern here, UGH I'm so sorry you have to potentially avoid even familiar products for fear of ingredient changes. That is really shitty.
